Sitar restaurants are an oasis, serving a fast growing group of enthusiasts, many of whom started as complete new-comers to the Indian style of cooking. The Singh brothers of Sitar Restaurant come from Banga, a large town in Northern India where their father owned a restaurant and a sweet shop of special desserts. As teenagers, the brothers all learned to cook and enjoyed it. Dreaming of opportunity they traveled to Boston, where they worked for a time at a friend's resataurant. The Brothers spent four years researching the area and decided the city of Springfield would be a promising site for their own restaurant venture. They worked as hard as ever, beginning with a luncheon menu and graduating to a lengthy menu covering both lunch and dinner. The Singhs have earned great reviews for the quality of their distinctive cuisine, and have a high regard for their use of vegetables. They are great believers in fine breads and are justly famous for them. There are over 10 different kinds of bread baked fresh daily.
