I stayed at the Courtyard Marriott in Pueblo on business, hoping to find some great mexican food during my visit. This place is average when it comes to the taste of food. I had the steak and shrimp fajitas. The steak was chewy and the rice didn't taste that great. However, my server, Kayla was fantastic. Good service. Mediocre food.
You can get better Mexican food at Chili's than Roja's. Shrimp fajitas with no flavor other than burnt and salad shrimp at that.
