Chef Jean-Pierre Maharibatcha, formerly chef de cuisine at Orchids, has brought the kitchen at John Dominis up to snuff again. Of Vietnamese, French and Indian heritage, the French-trained chef makes sure the kitchen cooks its array of seafood right, even if the preparations are standard. You just can’t go wrong with locally caught opakapaka or mahi mahi done in one of five ways, perhaps simply...
Fresh fish and stellar views have been the standard for 20 years. The menu showcases fresh island fish and the floor to ceiling windows frame the surfers and Diamond Head. The best tables are near the windows.
