Documentary filmmaker Bryan Tucker has just released an interview he did of Scott Carsberg as he prepared to close his Belltown restaurant, Bisato, nearly one year ago (the last day of service was October 14, 2012). Carsberg and his wife operated that space for 20 years, running Lampreia before making the switcheroo.
Owner Michael Forte, who co-owns The Lookout, says they're going to serve upscale Louisiana cuisine, but they're essentially a public house, which he believes the name reflects. He's aiming for an April 2 opening:

Scott Carsburg is one of the most creative, technically deft chefs going. His former restaurants - Lamprea, and in the same space, Bisato - were legendary haunts for Seattle's fooderati. Bisato (née Lampreia) is a product of chef Scott Carsberg's quick turnaround of a construction project. Gone are former Belltown hotspot Lampreia’s linened tables: the room is now centered around an enormous J-shaped bar, which also houses a gleaming red meat slicer. On the Menu: Italian-inspired classics that are reinvented and modernized, sometimes to detriment. Case in point: the meat ragu on polenta, features quenelles of ragu pulverized to a paste, then spooned into lovely, aesthetically-pleasing shapes. (Pity about the texture.)
When to Go: Get to Bisato on a weeknight, after work--this is the perfect spot for a quick bite or two with friends or co-workers.
Look Good: It's not a formal restaurant, but a recent visit saw most patrons dressed in business-casual attire.
