Seasonal cooking by Chef Paul Virant.
Led by rising star chef Paul Virant, formerly of Chicago's Blackbird, Vie offers seasonal contemporary American cuisine inspired by Western European cultures and rustic fare. The dining room and lounge reflect a classic French style with an American point of view offering plush amenities and a wood-burning fireplace.
Chef-owner Paul Virant (Ambria, Blackbird, Everest) has a gem of a restaurant in a town that had hardly known fine dining before, despite its affluent status. The winding floor plan and neutral dining room with black and white photography offer a low-key (and stylish) backdrop for innovative and artful but not over-the-top cuisine. Virant comes up with some interesting and creative...
City dwellers say this Western Springs New American is "worth the travel" to the 'burbs for Paul Virant's "exceptional" New American cooking that showcases "the season's best" ingredients in "outstanding" "fine-dining" dishes; the space is "warm and inviting but still elegant", and "impeccable" service further justifies the spendy tabs.
Chef-owner Paul Virant (also of Perennial Virant) has a gem of a restaurant in an affluent town that hardly knew fine dining until his arrival. The space, set on the site of an historic home, pays homage to its predecessor---but with a…
It's well worth the trek to Western Springs for Paul Virant's Vie. Not ony will the list of fresh-from-the-farm seasonal ingredients overwhelm (from caperberries to sorrel to baby beets to ramp picalilly), so will then number of credited Midwestern farms. It's a veritable who's who of local farming. Five- and eight-course tasting menus are available.
Chef-owner Paul Virant (Ambria, Blackbird, Everest) has a gem of a restaurant in a town that has hardly known fine dining (even though Western Springs is an affluent suburb). The look is clean and the décor is from the minimalist school of design. Those aluminum chairs (by DecoDina) are not the most comfortable, and the noise level gets up there when the place is full (most of the time). Focus...
Every detail, every morsel was spectacular. One of the best spots on earth.
Another outstanding time at Vie. NEVER disappointed. Took my brother and his wife with and they absolutely loved the service. Just a perfect gem in a very nice neighborhood. THE FOOD IS AN EXPLOSION OF DELICIOUS AND UNIQUE FLAVORS!!!! And I CANNOT say enough about how polite and extremely knowledgeable everyone is. Our server Brett knew everything about wine and Patrick the bartender was just...
We took our daughter here for her 21st birthday and did the 5 course menu with a paring of wines for each course. We are a "foodie-family" so this is a special treat even for our daughter.
Great dining.
My husband and I were celebrating Valentine's Day and chose Vie. It was the perfect pick. The food was outstanding, the wine choice by their sommelier was spot on and the service was wonderful. Everyone was very knowledgeable & took the time to answer any of our questions. We have been to several restaurants in Chicago, including other James Beard Award Winners and this is by far one of our...
