Ask them to kick it up a notch for authentic cajun... YUM. We love cajun food and my husband is a great cook. Honestly? they do it right. They had to tone it down a bit for the location but if you want the genuine article, ask them to kick it up a notch! AMAZING!!!!!

Great cajun food!. Four semi-retired professional guys from Boulder/Denver, with discerning tastes, were on a golf excursion in Canon City last week and tried the Bistreaux for dinner. Wow, it was terrific. Everything we had was great. I had the red beans and rice plate with a cup of seafood gumbo --- it was some of the best Cajun food I've had in a few years. All of us were duly impressed....

Our family and friends had a wonderful evening. The food is outstsnding! The service was great. Need a little work on their beer and wine offerings.

Its ok. The shrimp po boy was OK. My wife had the chicken alfredo. Had decent taste but the chicken was bland. Tried the oyster veltri. Pleasantly surprised by freshness of the oysters but bacon was chewy and my wife "choked". There should be more authentic ingredients on the menu but I will return to try other things. Do yourself a favor and go for supper. Its the same price. Kind of $$$ for...
